Michael Gantley

I joined the staff at Athlone Institute of Technology in September 1980.

I had worked in various 5 star hotels in London including the Grosvenor House and Waldorf hotels. It was during this time that I attended Ealing College of Higher Education where I graduated with a Master Chef Qualification (706/3) in Kitchen & Larder from the City & Guilds of London Institute. I entered the Culinary Olympics [hotelympia] and won medals in various competitions.

I also graduated with Certificate in Education from the City of London University, Roehampton. This gave me a great desire to exit the professional kitchens and enter the education ‘kitchen’ to pass on my knowledge and skills.

I have kept in touch with industry by acting as culinary consultant to the Great Southern and Best Western Hotel Groups.

I have played an active role in curriculum development by working closely with Failte Ireland in the development of culinary arts courses.

I have been external examiner to Dublin Institute of Technology [Cathal Brugha St] for all their advanced culinary programs and sat on their advisory board for ten years.

I have tutored many students to win awards at various national & international competitions, the highlights being Emer Quinn to win gold medal at hotelympia, Fergal Nugent being awarded 4th place at the world skills competition, Christopher Molloy winning the national skills competition and more recently Daniel Skukalek winning national chef of the year competition. I also took great satisfaction in preparing students for the national cater- quiz competition – which we won on numerous occasions the highlight being Eoin O’Connor & Marie Brady winning the European Final in London .

As part of my BA in Hospitaliy Education, I researched the methods of teaching culinary arts education, many of my findings have been implemented in the present programs.
