Prior to my academic career I worked in the Hospitality Industry for 15 years, having worked in London, Paris, Switzerland and the United States of America in management positions before returning to Ireland to take up a senior management position. I have been teaching in the department for the past 10 years where I deliver lectures to students undertaking level 6, 7 and 8 programmes, teaching a range of modules in Hospitality Management. I also deliver modules on day release programmes, which comprise of adult learners undertaking programmes in Culinary Arts and Restaurant Management. I supervise final year degree projects for students undertaking the BBS in Tourism & Hospitality Management and the BBS in Tourism & Sport Management.

2010 - Completed a Lecture Development Programme at the University of Johnson & Wales, Rhode Island, USA. This three week programme focused on student engagement and innovative approaches to teaching and learning in hospitality from an international perspective.

2008 - 2014 - Externa l Examiner at Waterford Institute of Technology in the Scholl of Humanities, Department of Languages, Tourism and Hospitality.

I have been involved in both internal and external panel reviews for new programmes in the department.

I attended a number of training courses at AIT which include Using Technology to Enhance Teaching and Research, Writing Skills, Library, Moodle, Twitter and Social Media training and Effective Teaching and Assessment Methods - a Workshop by Jenny Moon.

2009 - 2015 Programme Leader for the Diploma in Restaurant Management responsible for programme development, management and marketing of the programme and candidate recruitment.

2004 - 2014 Student Work Placement Coordinator monitoring students on work placements on undergraduate programmes and liaising with industry supervisors.

2009 - 2011 Programme Leader for the BA in Spa Management (Year 2) responsible for the management of work placements, sourcing placement opportunities and monitoring of students whilst on placement.

2004 - 2015 I organise and manage education trips for the students.
