The aim of this programme is to provide you with the professional craft and supervisory skills in bar and beverage service in order to provide a quality and unique customer experience in the Irish tourism industry.

You will learn practical skills in the areas of bar and beverage service, casual dining, culinary skills, mixology and customer communications. You will be able to demonstrate understanding of bar and beverage product knowledge, and be able to assess customer needs and develop selling and merchandising techniques.

The course also covers the application of business principles to bar and beverage service operations in the areas of marketing, merchandising and sales and cost control. You will also learn how to identify and apply appropriate legislation in relation to: equality, employment, environmental best practice, food safety legislation, health and safety, and licensing laws.

Minimum Entry Requirements

Leaving Certificate

Grade D3 at ordinary level in five subjects in the Leaving Certificate examination. One of these subjects must be English.

FETAC

Any FETAC level 5 qualification is acceptable. There are no specific module requirements.

Marketing Principles or Business Law

Progression

As a graduate of this higher certificate, you will be eligible to apply to join year 3 of the BA in Hotel and Leisure Management.

As a graduate of this programme, you will be qualified to work as bartenders and food service personnel in a range of hotels, bars and related service outlets.
